Blueberry Sauce

Lemons and blueberries practically go hand in hand.  The flavor combination just works.  That being said, I made an outrageous blueberry sauce to accompany my lemon "angel food" cake.  It is probably one of the easiest sauces you can make!  And it would go well with other dishes, as well.  For example, cheesecake, ice cream, pound cake... the possibilities are endless.  With frozen blueberries, this sauce can be made anytime of the year as well as be an ease on your wallet.  However, fresh blueberries are great to use when they are in season. 

Blueberry Sauce
  • 2 cups blueberries or a bag of frozen blueberries
  • pinch of salt
  • granulated sugar
  • zest of half a lemon
  • juice of a quarter of a lemon (a wedge)
  • splash of water
Combine the blueberries, salt, lemon juice, zest, and water in a sauce pot.  Place heat on medium and let the blueberries cook down.  After they have cooked down, add in enough sugar to make it slightly sweet or to your own desired level of sweetness.  Cook it for a couple more minutes and then pour into a bowl or serving dish and let cool in the refrigerator until serving time.
