Pesto... Pasta... Perfecto...

Yay!  An alliteration!  I recently made a lot of pesto in order to put dinner on the table.  I'll call that the "Pantry Dinner" which I will write about in the near future.  However, tonight, I realized one of its great qualities- it helps you out in a snap :-)

I'm not a chef by a long shot.  I like to consider myself as one.  Some of my friends consider me one, perhaps just because my culinary skills are better than theirs at least ten-fold.  However, I'm not an actual "chef."  Real chefs have had many many years of experience and seen and made so many things.  They are also INCREDIBLY busy people.  So busy that I wonder what it is that they do at the end of the night.  Well, the most obvious answer is that they eat.

For some people, it would seem to be a head-scratcher but some chefs actually like to cook their own meal after being in a kitchen all day.  For me, I still like to cook dinner after a long day of school, studying, errands, etc.  Well, today was busy busy busy and what happened about an hour ago after I finished all my stuff was I made a simple dish of pasta and pesto.  Well, all I had to do was boil the water, salt it, and drop the spaghetti.  After it was done, I put it all in a bowl, added a big heaping spoonful of pesto, and a little of the pasta water.  Really, it's the simple things that comfort you and make you happy!

I know this entire writing might seem scattered.  I can be scattered at times.  However, what I wanted to get at is that it's awesome to have ingredients that are ready to go.  This would have definitely worked with store-bought pesto but, I prefer to make it myself; it only takes a few minutes.  That pesto above is a mixture that contains 4/5 parsley and 1/5 basil, extra virgin olive oil, Pecorino Romano cheese and Parmigiano Reggiano, garlic, and salt and pepper.  Fabulous.

Take home note- pesto in the house = great.
